Banana Bread

Old fashion Banana Bread

Ingredients
  

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 3 eggs (beaten)
  • 2 cups mashed bananas (5 medium to large)
  • 1 cup sugar
  • 1/2 cup melted butter (1 stick)
  • 1/4 cup chopped walnuts optional
  • 1 Streusel Topping optional
Streusel Topping
  • 1/4 cup packed brown sugar
  • 3 tbsp all purpose flour
  • 1/3 cup chopped walnuts

Equipment

  • 1 9x5x3 loaf pan, or (2) 7.5x3.5x2 loaf pans

Method
 

  1. Grease bottom and sides of 9x5x3 inch pan, (or two 7 1/2 x 3 1/2 x 2; set aside. Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Make a well in the center of flour mixture; set aside
  2. In a medium bowl combine eggs, bananas, sugar, and butter. Add egg mixture to flour mixture. Stir until moistened (batter should be lumpy). Mix in the walnuts and pour batter into pan, or pans. If using Streusel topping, sprinkle over batter.
  3. Bake in 350° oven for 55 to 60 minutes for the 9x5x3 inch pan, or 40 to 45 minutes for the two smaller pans, or until a wooden toothpick inserted near center of bread comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan and cool completely on a wire rack.
Streusel Topping
  1. In a small bowl combine packed brown sugar and all purpose flour. Using a pastry bender, cut in 2 tablespoons of butter until mixture resembles coarse crumbs. Stir in walnuts.
